The sweet and sour mix is an essential ingredient in any bar, it's one of the most basic ingredients for cocktails and a good one will upgrade any cocktail.
This recipe goes way back with me, it's the first thing I do when teaching people how to mix drinks. Most of the world's popular and classic cocktails contain sour mix, and you will be amazed how simple it is to make it, at your bar or at your kitchen.
Sweet and sour mix is also called, margarita mix or sour mix, you can make it yourself or buy pre-made ones, there is nothing like making you own, you will surely feel the difference.
In a sauce pan, put two cups of sugar and 1 cup of hot water, stir and allow the sugar to dissolve, wait until you get a don't let sugar crystallize!
Let the syrup chill and pour into a glass bottle, you can keep it in the fridge for months.
Now it's all in the balance of the two ingredients, 2 glasses of lemon juice, always prefer freshly squeezed, and 1 glass simple syrup. When making a bigger batch just follow the same method, 2 parts lemon juice and 1 part simple syrup.
If you like it a bit more on the sour side add another half a glass of lemon juice, for a sweeter mix add a half of glass simple syrup.
Adding egg white of two eggs to the mix gives it great texture and makes amazing foam when shaking, your cocktails will be beautiful, if doing so do not keep your mix around for more then a day, unless you are using pasteurized egg white.
