Sea Change

Ingredients:

30ml Gin

30ml Cointreau (triplesec)

Crushed Ice

Tonic Water

1 Lime

2tsp Raw Sugar

Method

Cut the lime in half lengthways and remove the center pith.
Cut the halves into quarters lengthways, then cut the quarters into thirds crossways giving 12 pieces of lime.
Muddle the lime in a cocktail shaker with the sugar to release the juice and oils.
Add the Gin, Cointreau and Ice and shake well.
Pour entire contents into a tall glass and top with Tonic Water.
